Elsie Iago’s gift to her daughter Gypsy Calder-Potts when she returned with her young family to her ancestral home, Highbank Organic Orchards in Kilkenny, Ireland, was a barrel of her apple wine.
This was fondly referred to as ‘Granny’s Wine’. Gypsy would send one of her four boys to fetch a carafe of the wine, which was kept in the cool stables. for an after-dinner tipple.
The apple never falls far from the tree. Today Rod Calder-Potts, one of Gypsy’s sons, has perfected his ‘Granny’s Wine’ recipe.
